On a trip to Mexico after opening his first couple of restaurants, Chef/Proprietor, Scott Harris met a wonderful old Agave farmer with a dedicated pet donkey. This man’s steadfast donkey had worked alongside him in the Agave fields for over 20 years!
While most people would disregard their work animal, the old man farmer treated Fat Rosie as part of the family. They had a rare and inseparable bond that had formed through the many years of hard work, sweat, and tears. Scott admired the love and care that this old man had for his trusted donkey.
He admired it so much in fact, that one night after many shots of tequila he promised the old farmer he would one day open a tequila bar and name it after the beloved donkey, Fat Rosie.

We walked in on a Friday evening without any formal reservation yet we got the table pretty quickly. This place has a party vibe and rustic ambiance and was too loud with music. We ordered a bunch of items from cocktails to desserts. The cocktails were phenomenal and the quantity was generous. We loved their fiesta nachos and the queso fundino with warm tortillas. The rest of the items were very average. The chimichanga was undercooked and extremely chewy, the chile relleno had a bitter aftertaste. However, the enchiladas were cheesey and delicious. We finished our meal with flan which was splendid.
I recently visited Fat Rosie’s Taco & Tequila Bar on Taco Tuesday and had a really enjoyable experience. The atmosphere was very lively and inviting, which made it a great night to stop in. I ordered the chicken and steak fajitas, and they came out sizzling hot, which is always a good sign. The flavor was really good and the portion was generous. The plate came with sides of refried beans, rice, and all the classic condiments like pico de gallo, sour cream, and shredded cheese, which made it easy to build the fajitas exactly how I like them. The chips and salsa were also very good and fresh — a great way to start the meal. The star of the show for me was the frozen strawberry margarita . It had a really good flavor and the presentation and vibe of the drink were on point. My server, Alfredo, did an excellent job. He was very attentive, checked in often, and made sure everything was taken care of throughout the meal. Overall, it was a very good experience with great food, good drinks, and solid service. I’d definitely come back again, especially on Taco Tuesday for the fun atmosphere.
Cool spot with a nice atmosphere, but the food and drinks were just okay. The margaritas seemed a little watered down, and the food was decent but slightly salty. The queso was good, though, and the overall vibe of the restaurant was probably the highlight.
We came to see the World Cup game here and had so much fun! Hugo, our bartender was phenomenal! Always ready for what we needed! The sopes were yummy. The margarita to drool for! We would definitely return!
Wow! Is all I have to say from the entrance to the exit!! Alfredo was our waiter and he was excellent!! Explaining my experience here would take forever so maybe my pictures will do justice 🍹🍽. The tortilla soup was phenomenal♡ "from the cook and waiter", me and my boyfriend got a free shot!!! The buss boys the bartender all the other waiters made sure everything was taken care of they had eyes on the restaurant entirely. I loved this place so much! They cleared the tables in a timely manner ♡ just everything! There is always a BUT in there right? Lol Since I thought so highly of this place and the service and atmosphere in general i had one thought to myself. They should take the plates with silverware sets from the table that dont accommodate the table for sanitary reasons. (Like they do at super high end restaurants ya know) we accidentally touched the plates that weren't being used.. andddd they have to move the plates anyways when cleaning the table from service ya know anything could be done to them in theory but we all hope for the best. Anyways enjoy the art around the restaurant its amazing! And Alfredo was very knowledgeable in everything I asked him from food preperation to restaurant history culture history!! Thanks !!
